Pineapple salsa is quite easy to make; with basic ingredients. It’s a little sweet, a little spicy, and 100% delicious. This fresh pineapple salsa could be used as an appetizer or used as a topping for any Mexican themed meal. It’s also perfect for grilled meats

INGREDIENTS
• 3 cups diced fresh pineapple
• ½ cup chopped red onion
• ¼ cup chopped fresh cilantro
• 5 tablespoons lime juice
• ¼ teaspoon fine sea salt
INSTRUCTIONS
1. In a medium serving bowl, combine the pineapple, cilantro, stir to combine.
2. Soak the chopped onions in salty water for five minutes and drain
3. Add the onions to mixture in step 1 and season to taste with lime juice
4. It’s best served fresh but keeps well, chilled, for up to 4 days.
You could add red bell peppers and tomatoes for some extra crunch and complementary sweetness
