Lemon- Chocolate Cake with strawberry buttercream frosting.

I have been receiving requests for the tender, moist Lemon-Chocolate Cake recipe I used for my daughter’s birthday.

This has been my run to recipe for three years now because it’s quite simple and straight forward. Here goes……
Ingredients:
1 ¾ cups all-purpose flour
2 teaspoons lemon zest
1 teaspoon lemon juice
1 cup sugar (reduced to my liking since we r trying to cut down on our sugar consumption)
¾ cups unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
½ cup sour cream (home made by mixing 1 cup of plain yoghurt and 1 teaspoon baking soda)
½ cup vegetable oil
2 large eggs
Strawberry Frosting:
1cup unsalted butter
1 egg yolk
1 teaspoon strawberry essence
1 ¼ cups sifted confectioners’ sugar
Procedure:
1. Preheat the oven to 350 degrees F. This is usually maximum flame for my gas oven.
2. Wash, dry and grease the baking tins. In most cases, I simply line my tins with baking paper.
3. Sift the flour, sugar, cocoa, baking soda, baking powder, lemon zest and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.
4. In another bowl, combine the oil, eggs, sour cream and lemon juice. With the mixer on low speed, slowly add the wet ingredients to the dry and adjust butter to a lightly thick consistence.
5. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely.
6. Remove cake from tins and place on tray. Trim off hard edges using a knife. With a knife or offset spatula, spread the top and sides evenly with frosting.

Creamy Strawberry Frosting Procedure:
In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium-high speed until light yellow and fluffy, about 3 minutes. Add the egg yolk, strawberry and continue beating for 3 minutes. Turn the mixer to low, gradually add the confectioners’ sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Spread immediately on the cooled cake.

We took the cake with us to the play park…. the kids and their parents literally jumped upon every piece of it with ohhhss and aahhhhs…Let me spare u the pride I felt 😂😂😂😂…
