Thai pineapple fried rice


Ingredients:
- 2 tablespoons vegetable oil
- 1 ½ cups chopped fresh pineapple.
- 1 large red bell pepper, diced
- ¾ cup onions
- 2 cloves garlic pressed or minced
- cilantro/ parsley
- 2 cups cooked and chilled rice (left over rice is best)
- Soy sauce, lemon, Salt, to taste


Procedure:
1. Heat a large non-stick frying pan over medium-high heat.
2. Add cooking oil, followed by the pineapple and bell pepper.
3. Cook, stirring constantly, until the liquid has evaporated and the pineapple is caramelized on the edges, about 3 to 5 minutes. Then add the onion, garlic, and cilantro.
4. Add the rice to the pan and stir to combine. Cook until the rice is hot, stirring occasionally, about 3 minutes.
5. Remove the pan from heat and squeeze in lemon juice.
6. Stir to combine and season to taste.
7. Serve.
(I added sweet corn and it tasted great)
