Quick snacks for kids

One of my favorite side dishes for grilled meats is baked potato (sweet/ irish) wedges. They are extremely easy to prepare. I can also easily mix and match the seasonings to go with whatever meat we are eating.
These potato wedges are perfectly crunchy on the outside, but soft on the inside, and they have tons of flavor. They may be served as a snack or alongside a main meal.

Recipe for baked potato wedges.
Ingredients:
• Sweet potatoes
• olive oil to coat potatoes
• 2 T. seasonings of choice
• Salt and pepper to taste (when its Irish. I never add salt to sweet potatoes)

Directions:

  • Preheat oven to 425ºF.
  • Line a large baking sheet with baking paper or spray the baking tray with anti-stick baking spray.
  • Peel and cut potatoes into wedges
  • In a medium bowl, mix olive oil, herbs and pepper and toss the potato wedges into oil mixture until fully coated.
  • Arrange potatoes in a single layer on baking sheet and bake each side for 20 minutes in preheated oven until they are cooked through and crispy.
  • Serve immediately with your favorite dipping sauce!
