I’m usually a fan of lots of stuff on top of my leafy greens when it comes to salad. I often make use of meat, cheese, vegetables, fruit, nuts, seeds, beans, eggs, grains and so much more. Basically the more extras, the better for me :).
Sometimes, eating a simple salad sounds just perfect. More so when I’m in the mood for raw veggies; but not just plain raw veggies. In those situations, I turn to one of my favorite Raw Veggie Salads — the Greek salad.
Greek salad is a fantastic side dish for so many different meals, and I often have it on its own for a lighter lunch/dinner.

Recipe:
Sometimes I do add a base of leafy greens to this for a change of taste. I might use kale, Chinese cabbage, spinach, lettuce, collard greens..etc
Ingredients: (Quantities adjusted to my liking)
• cucumbers
• tomatoes
• green pepper
• Red onions
• Olives
• Cheese
For dressing:
• Oregano
• salt and pepper to taste
• olive oil
• balsamic vinegar
I used the store bought Greek salad dressing because I haven’t yet figured out how to best preserve my home made dressing. And for those ‘am exhausted” evenings, readymade dressing comes in handy.

Procedure:
Layer sliced veggies and cheese in a large bowl
Mix oregano, salt, pepper, olive oil, and vinegar in a small container.
Pour dressing over veggies just before eating.
Sprinkle any other toppings. I used sweet corn for this one.
